Over the last few years, our winery has grown in terms of both quality and quantity. And we have also increased the healthfulness of our wines by using smaller and smaller amounts of sulfur during vinification and by adding no other enological products other than experience and passion. In the vineyards, we have shifted from conventional farming to an organic regimen.
We have focused on our Asolo Prosecco DOCG and our Colfòndo and now we are seeing the results of our efforts.
Over the last few months, we have begun selling our wine in Florence and it seems likely that we will expand to all of Tuscany soon, as well as Emilia Romagna. Orders from Sicily, Lombardy, and Latium are growing. And from abroad, we are getting requests for our Prosecco from America, England, Japan, and Australia.
For the first time in our lives, a Norwegian importer has asked that we reserve our remaining 2010 Colfòndo for him.
Last Sunday, we all sat down to eat together, and just like old times, we discussed our future. We decided that we do not want to grow anymore. We are going to stop here.
Well, our goal is to produce the highest quality Prosecco, so we’ve decided not to increase the number of bottles we produce. Instead, we’re planning to invest everything we can in getting our wines to you so that you can experience the same emotion that we do when we taste them.
