A noted American wine writer, Meg Houston Maker<\/a> (one of our favorites), recently tweeted to me asking about the correct spelling of col fondo.<\/em><\/strong><\/p>\n

“Jeremy, is it Colf\u00f2ndo<\/em><\/strong>, Col Fondo<\/em><\/strong>, Col F\u00f2ndo<\/em><\/strong>, Col F\u00f3ndo<\/em><\/strong>, or other? I see it all different ways. Thank you!”<\/p>\n

My answer to her was Col Fondo<\/em><\/strong>. That’s the correct Italian spelling of the designation, which means with its sediment<\/em><\/strong> (col<\/em><\/strong> is an articulated preposition of con<\/em><\/strong> and il<\/em><\/strong>, meaning with the<\/em><\/strong>, and fondo<\/em><\/strong> means bottom<\/em><\/strong> or sediment<\/strong><\/em> in Italian).<\/p>\n

But that doesn’t mean that it’s not correct for producers of Prosecco Col Fondo<\/em><\/strong> to write it in a different way on the label, like Bele Casel<\/em><\/strong>, who writes Colf\u00f2ndo<\/em><\/strong>.<\/p>\n

In the official appellation regulations<\/a> for Prosecco DOCG<\/em><\/strong> (denominazione d’origine controllata e garantita<\/em><\/strong> or controlled and guaranteed origin designation<\/em><\/strong>), there is no mention of Col Fondo. There is only the inclusion of a clause that allows for refermentation in bottle<\/em><\/strong> and bottling of the wine without disgorgement<\/em><\/strong>.<\/p>\n

Professor Michele Fino<\/em><\/strong> of the University of Gastronomic Sciences<\/em><\/strong> in Piedmont, an expert in food and wine legislation, has proposed language that would include the option for winemakers to write Col Fondo on their labels. While under review and likely to be adopted, the proposed amendment has not yet been approved.<\/p>\n

In the meantime, many of the Prosecco Col Fondo producers display the designation Col Fondo in different ways, just like Bele Casel, who, I believe, uses Colf\u00f2ndo because they find it to look more attractive on the label.<\/p>\n
