And this is one of the reasons why it is so important to trim the longest and most cumbersome canes.<\/p>\n<p>The technical term for trimming the vineyard canopy is <em>topping<\/em> (<em>cimatura<\/em> in Italian).<\/p>\n<p>Come tutte le lavorazioni che si fanno in vigna anche la cimatura ha dei pro e dei contro, cercher\u00f2 oggi di spiegarveli.<\/p>\n<p>As with all vineyard practices, topping has its pros and cons.<\/p>\n<p>PROS:<\/p>\n<p>Maggior arieggiamento dei grappoli all\u2019interno della chioma<\/p>\n<p>&#8211; greater aeration of the lower-hanging bunches;<br \/>\n&#8211; greater ease in applying vineyard treatments;<br \/>\n&#8211; easier passage for the tractor in densely planted vineyards;<br \/>\n&#8211; it helps to produce more leaves around the secondary buds; those leaves facilitate the ripening of polyphenols when photosynthesis ceases in the other leaves.<\/p>\n<p>CONS:<\/p>\n<p>&#8211; increased development of secondary buds and increased risk of rot;<br \/>\n&#8211; decreased number of new leaves at the top of the vine and resulting vegetative imbalance;<br \/>\n&#8211; the open cuts expose the plant when the vine is highly active;<br \/>\n&#8211; diesel consumption.<\/p>\n<p>Noi cerchiamo di limitare al massimo le cimature, tendenzialmente ne facciamo un paio all\u2019anno, l\u2019anno scorso su una parte del vigneto abbiamo fatto delle prove, una sola cimatura solo perch\u00e8 l\u2019annata ce l\u2019ha permesso.
